Thanksgiving leftovers are likely to happen in most homes as we celebrate with a little less invites at the table. The normal twenty people over may have been cut in half, which left the question of … So how much should I cook?

Like many left with leftovers this year, some more than normal, some celebs are enjoying the extra feastings.

Mindy Kaling even dressed up to enjoy her Thanksgiving leftovers. Kaling posted her fab recipe for stuffing the day before, saying “I like making stuffing because even bad stuffing is good.”


So what else can you do with all this stuffing from Thanksgiving leftovers? According to Kourtney Kardashian you can use it in stuffed peppers. Kourtney posted the recipe in Poosh saying, You can substitute cooked rice if you have leftovers.

Her ingredients includes 1 beaten egg 2 cups shredded turkey, 2 cups stuffing (or cooked rice), salt and pepper to taste, 4 yellow and red bell peppers, hollowed out 1 1/2 cups shredded mozzarella.

To make the stuffing and turkey recipe, Preheat oven to 350° F. In a bowl, combine the beaten egg, turkey, and stuffing or cooked rice. Season lightly with salt and pepper.
Spread the hollowed-out peppers on a baking sheet. Spoon the mixture into the peppers and top with cheese.

Bake until the peppers have softened and browned and the cheese has melted. You can top with Parmesan and parsley.

Nicki Minaj also enjoyed her Thanksgiving leftovers on the gram.

The new mom posted a video of her plate saying, she made Thanksgiving dinner her way. In her Reel she captioned, “is it still Thanksgiving dinner if you don’t cook a dang Turkey and all dat otha stuff? Who wanna Mac & Cheese battle? Who wanna fried chicken battle? Taste better than Popeyes.”

Nicki recorded the video the day before but then posted a video the next day saying she forgot to post it but she might post her leftover plate.

Looked good to us though, let’s see if she drops a cook book called “Pink Recipes”.
